What a great magazine ~~

My niece sent me a fund raiser to buy some magazines for her school.  I wanted to buy, but, I'm not a big magazine person.  I don't do the fashion thing and all that stuff.  I do like cooking, but, I can google a lot of that.  I was looking and looking and couldn't decide on a magazine.  Was getting very frustrated and then I came across this one.  Just love it!  Glad I ordered it.

From food...to a "HOME COLLECTION"

I love to cook, make food, cater, and all that.  Sometimes, very often, I could do it just to do it.  Then what?  So with that problem, I've created another one ~~~ My "HOME COLLECTION".  Now I love to do two things and have nothing to do with them.  I do one craft show a year, I used to do more, but, this one is the best!  You wouldn't think so, but, it is!  The Christmas Harvest Show.  It is at the Gallatin Civic Center in November.  It is free to the public.  I make more money there in one day, small fee, than any other show I've done.  I will offer my "HOME COLLECTION" there this November and see how that does along with my dry soups, spices, granola, queso, peach salsa...etc.  More info to come!

Celebration of Life ~~

I catered a "Celebration of Life" party this weekend.  There are times when I honestly believe that things are totally meant to be.  This is one of those occasions.  The Man was from California.  Got my name and number from his cousin, living here in Gallatin, His father unexpectedly passed away.  Our communication was wonderful.  The first ideas I gave him he loved and it was great from the start to the end.  It wasn't a large catering, about 80 people or so.  It was one of the prettiest, smaller, presentations that I have done.  I wish I had gotten a full picture view, but, time got away with me.  I was very organized and relaxed, but, just didn't get the full effect of the table.  Hate when that happens!  Here are a few pictures from my cell phone.

Some fun things to put on a stick!! ~~

BLUEBERRY KIWI TART

blueberry-kiwi tarts
Yields: 4

    Ingredients


  •  

  • 2  recipes Processor Tart Dough, (see tip below)
  • 3 1/2 cup(s) blueberries
  • 1/4 cup(s) granulated sugar
  • 2 tablespoon(s) seedless blueberry jam
  • 1 tablespoon(s) fresh lime juice
  • 1/2 teaspoon(s) grated lime zest
  • 2  kiwis, peeled, sliced
  • Confectioners' sugar, for dusting
  • Julienned strips lime zest, for garnishing

Directions
  1. Divide two recipes-worth of tart dough into 4 pieces. Press evenly over bottoms and sides of four 4 1/2-inch round tart pans with removable bottoms. Prick each with fork; freeze 15 minutes.
  2. Place oven rack in bottom position; heat oven to 400 degrees F. In a medium bowl, toss 2 1/2 cups of the blueberries, granulated sugar, jam, lime juice, and lime zest. Fill shells with berry mixture; place on baking sheet.
  3. Bake until crust is golden and fruit is bubbly, about 30 minutes.
  4. Cool tarts in pans on wire rack. Remove sides of pans. Top tarts with 1 cup blueberries and kiwi slices. Dust with confectioners' sugar and garnish with lime zest.

Tips & Techniques
To make the dough, refer to our easy Processor Tart Dough recipe. You'll need a double batch to make four 4 1/2-inch tarts -- we'd recommend making this recipe two times instead of doubling for an optimal result.

PROCESSOR TART DOUGH


Ingredients
U.S.MetricConversion chart
  • 1 1/2 cup(s) all-purpose flour
  • 1 tablespoon(s) sugar
  • 1/4 teaspoon(s) salt
  • 1 stick(s) ( 8 tablespoons) unsalted butter, cold, cut up
  • 1 tablespoon(s) cold water, up to 3 tablespoons

Directions
  1. In food processor, combine flour, sugar, salt and butter until mixture resembles coarse crumbs, 10 to 15 seconds.
  2. Drizzle in 1 to 3 tablespoons cold water and stir with a rubber spatula until dough just comes together, dough should not be wet.
